Potato Waffles with Gravy

If you love savory breakfast, then this is for you. It’s easy and quick to whip these Potato Waffles with Gravy, on weekends for breakfast. These potato waffles are so delicious that you can have it for lunch or dinner.

Waffles are one of my favorite breakfast options, and once in a while, I do love a good waffle with simple pancake syrup. But I prefer savory breakfast to sweet. So I came up with my version of potato waffles served with a quick gravy that can be put together in 30 minutes. These Potato waffles with gravy are so delicious that we had it for dinner as well. A great tip to keep the waffles warm until you serve is to cook all the waffles and place them on a cookie sheet. Place the cookie sheet in an oven preheated to 100C.

How to make Potato Waffles

The first time I made these Waffles, I ran out of buttermilk, so I used milk. The flavor was good, but still, I felt something was missing. The second time, I used buttermilk, and my suggestion is to use buttermilk for the best tasting waffles. This recipe is excellent to use up your leftover mash potatoes.

The gravy is slightly spicy, but you could leave the chili powder out if you don’t like spicy food.

If you don’t own a waffle iron, no worries, you can use this recipe for making pancakes and still serve with the gravy. 

Ingredients 

potatoes

mushroom

bell pepper

onion

flour

baking powder

baking soda

black pepper

Garlic Powder/ fresh garlic

chili flakes

cheese

eggs

buttermilk

butter

In a bowl, add all the veggies, cheese, including the spices, and mix well until combine using a rubber spatula. 

In a large bowl, add eggs, buttermilk, melted butter, and mix well with a whisk. 

Next, add the veggie mixture into the wet ingredients and mix well to combine.

Now, add the dry ingredients to the wet and using a spatula fold until combined. If you see a few lumps, that’s fine. Avoid over-mixing, this will make the waffles rubbery and tough. 

Preheat the waffle iron and spray with oil or butter. Pour 1/3 cup of batter and cook them until crisp and golden. Serve warm with gravy or just plain.

Ingredients

  • Potato Waffles
  • 180g / 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon garlic powder / 1 large clove of garlic grated

  • 1 teaspoon red chili flakes( optional)

  • 1 large egg

  • 480ml / 2 cups buttermilk

  • 2 Tablespoons melted butter

  • 200g /2 medium boiled potatoes mashed

  • 50g / 1/2 cup shredded sharp cheddar cheese

  • 112g / 1/2 cup shredded mozzarella cheese

  • 3-4 button mushrooms diced

  • 1/4 bell pepper diced

  • 1/2 small red onion chopped/ 1 teaspoon granulated onions

  • Quick Spicy Gravy
  • 1 teaspoon all-purpose flour

  • 1teaspoon butter/coconut oil

  • 1/4 teaspoon mustard seeds( optional)

  • 210ml / 1 cup chicken or vegetable stock

  • 1/4 teaspoon red chili powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon granulated onion

  • 1/4 teaspoon turmeric powder

  • 1/2 cup coconut milk

Directions

  • Potato Waffles
  • In a bowl, add all the veggies, cheese, including the spices, and mix well until combine using a rubber spatula.
  • In a large bowl, add eggs, buttermilk, melted butter, and mix well with a whisk.
  • Next, add the veggie mixture into the wet ingredients and mix well to combine.
  • Now, add the dry ingredients to the wet and using a spatula fold until combined. If you see a few lumps, that’s fine. Avoid over-mixing, this will make the waffles rubbery and tough.
  • Preheat the waffle iron and spray with oil or butter. Pour 1/3 cup of batter and cook them until crisp and golden. Serve warm with gravy or just plain.
  • Quick Spicy Gravy
  • Place a medium-sized pan on medium heat. Add 1 teaspoon butter or coconut oil and add mustard seeds. Whisk in 1 teaspoon flour and cook for a minute.
  • Next, add 1 cup of stock little at a time making sure you keep whisking until there are no lumps.
  • Lastly, add the red chili powder, garlic powder, granulated onion, turmeric powder, and coconut milk. Keep stirring for 2 minutes or until the gravy thickens slightly. Take it off the heat and serve warm with potato waffles.

Notes

  • Make-ahead -Cook all the waffles and place them on a cookie sheet. Place the cookie sheet in an oven heated to 100C, and keep them warm until you serve them.
  • The gravy can be made ahead.
