Tandoori Chicken Rice Bowls – with ground chicken

We always look for quick and easy meals to make especially, during summer. Let’s make these 30-minute Tandoori Chicken Rice Bowls. It is quick, easy, healthy, and loved by everyone at home.

Tandoori Chicken Rice bowls

This excellent chicken & rice bowl recipe is a great wholesome meal. Serve it with some yogurt, papad, or tortilla chips. It is fantastic for meal prep, office lunches, and entertaining. Serve with some cauliflower rice for a keto/low-carb meal. Basically, for any meal and I can guarantee that you will enjoy it!


We enjoy these healthy Tandoori chicken rice bowls during Summer. I am always looking for something quick and easy to make, and these; Tandoori chicken rice bowls come in handy during hot summery weather. I like marinating a batch, cooking the mince, portioning and, freezing until I need it. Try it with a side salad, some minty yogurt, a few papads. It is a delicious hearty meal. My favorite way to eat it is with some saffron rice.

To serve on the side with the Tandoori minced Chicken, I used short-grain rice; you could use basmati rice or any rice. A few other options that would work great are saffron rice, quinoa and, cauliflower rice.

Ingredients for ground/ minced Tandoori Chicken

Ground Chicken

Tandoori spice mix (masala)

Ginger

Garlic

green chilies

ground cumin

red color

lemon juice

yogurt

oil

cilantro| coriander leaves

How to make tandoori chicken with ground chicken

Here I used chicken breast which and ground in my food processor. Sometimes I like the combo of breast and thigh meat. But you can use already ground chicken or turkey for this recipe.

I used store-bought Tandoori spice mix(masala). However, you can use homemade tandoori spice mix if you prefer.
The store-bought spice mix will contain salt, so I have left the salt out in this recipe.
Read the ingredient list in the box. If your store-bought brand doesn’t have salt in it, you can add salt to your taste.

How to make Tandoori Chicken Rice Bowls

This ground chicken recipe is simple and can be made ahead. It is always better to marinate a day in advance; for the chicken to soak in all the flavors. Usually, Tandoori Chicken is marinated with yogurt. Adding yogurt tenderizes the meat and keeps it from drying.

Tandoori chicken for Keto

Add all the spices, ginger, garlic, green chilies, oil, yogurt, and cilantro to the ground chicken.

Mix until well combined. Leave it in the refrigerator to marinate for 30 minutes – 1 Hour. Marinating can be done a day in advance.

Place a pan on medium-high heat and add the marinated chicken into the pan. First, cook for 10 minutes, and while cooking, break the meat with a spoon.

Continue cooking for another 10 minutes until all the water evaporates. The meat should be lightly browned and fully cooked.

Ingredients

  • 1 pound / 500g ground(minced) chicken

  • 1-inch ginger

  • 3 cloves of garlic grated

  • 1 teaspoon ground cumin

  • 2 green chilies chopped finely( optional)

  • 2 Tablespoons Tandoori spice mix( masala)

  • A pinch of red color ( optional)

  • 1 Tablespoon vegetable oil

  • 2 teaspoons lemon juice

  • 1/3 cup / 80ml plain yogurt

  • 2 Tablespoons chopped cilantro/coriander leaves

Directions

  • Add all the spices, ginger, garlic, green chilies, oil, yogurt, and cilantro to the ground chicken.
  • Mix until well combined. Leave it in the refrigerator to marinate for 30 minutes – 1 Hour. Marinating can be done a day in advance.
