With just 5- ingredients, this golden cauliflower rice makes a delicious addition for your next meal prep. The Turmeric Cauliflower Rice with coconut is a flavorsome replacement for regular rice, and it’s Keto friendly too!

Rice is a staple in our house, and we have rice at least 5-6 times a week for lunch with curries. However, I try my best to eat low-carb whenever possible, and that’s when I need a replacement for rice. Having plain cauliflower rice every time can be boring. So I always look for ways to make it more interesting, and this is a fantastic way to prepare a bowl of flavor-packed cauliflower rice.

Turmeric and coconut with other spices are a must in my pantry, and I always have them in hand. They are added in almost every curry and Sri Lankan dish I prepare. We use freshly grated( shredded) coconut for greens that we call Mallun. Mallun is mostly greens chopped finely, sautéed with some turmeric and freshly grated coconut, and an essential dish for Sri Lankan lunch.
The Turmeric Cauliflower Rice with coconut recipe is inspired by the Sri Lankan Mallun we cook every day.

How to make Cauliflower Rice?

Making Cauliflower rice at home is quick and easy. Separate the cauliflower florets from the head and wash them. Dry them on a kitchen towel and put them into a food processor and pulse it until you get rice size pieces. Don’t have a food processor, then grate them or chop them very fine until you reach the rice-like texture.

Can I freeze cauliflower rice?

Uncooked / raw cauliflower rice can be easily frozen. Portion the riced cauliflower into freezer zip-lock bags and freeze for up to 2 months.

Ingredients for turmeric cauliflower rice with coconut

1 -large head of cauliflower riced/ store-bought cauliflower rice
2- cloves of garlic chopped finely
1 Tablespoon of Coconut oil
1/2 teaspoon of black mustard seeds’
1/2 teaspoon of ground turmeric
4 Tablespoons freshly grated coconut/ unsweetened shredded coconut
Salt to taste

How to Make Turmeric Cauliflower Rice with Coconut?

Rice the cauliflower in the food processor or use store-bought cauliflower rice.
Place a large skillet on medium heat, add 1 Tablespoon of coconut oil, 1/2 teaspoon of black mustard seeds, and let the mustard seed pop.
Next, add the cauliflower rice, chopped garlic, turmeric, and sauté it for 2 minutes.
Lastly, add freshly grated coconut and salt to taste and sauté it for 3 minutes. Stir it regularly. ( I like to cook it until I see a few brown spots for a roasted flavor)
Take it off the heat and serve warm with your preferred curries or grilled veggies.

Ingredients
